My Holy Grail Macarons!
Tiramisu is one of me and my husband fav dessert ( which is pretty rare that we both like the same thing :) because of all ingredients that answer us. Chocolate, coffee, mascarpone cheese and liquor . Even normally I am not a fan of alcohol drinks but I do like the taste and smell of liquor when it is in food or dessert.
So when tiramisu becomes macarons, when Italian Tiramisu meets French Macarons…like the best meets the best ^^. For me this macaron is just perfect combination.
..The smell is great, the taste of chocolate, coffee , creamy cheese and touch of rum…ummmmm…one never enough!! ^^

Recipe:
65 g egg whites
70 g sugar
87 g almond
83 g icing
10 g cocoa powder
mix almond, icing and cocoa and pulse in food processor about 30 sec, then sift together

Chocolate & Coffee Mascarpone cream( tiramisu) filling:
120 ml (1/2 cup) mascarpone cheese
2 tbsp espresso shot (room temperature cool) or you can use instant espresso powder
50 g dark chocolate (70% cocoa)
2 tsp vanilla coffee syrup (from Espresso House)
1 tbsp dark rum (optional)
dark cocoa powder for dusting ( before serving)
Directions:
1. melt dark chocolate in microwave and let it cool
2. beat mascarpone until soft, add chocolate, espresso, coffee syrup, rum and mix just to combine
3. pipe the mascarpone cream filling with piping bag on have of each macaron and sandwich them together
4. dust cocoa powder if desire
5. store macarons in an air tight container in refrigerator at least 24-48 hours before serving.
